Whole Chicken
Serves: 4-5 servings
Method

1 small whole chicken

1 Tbsp olive oil
-
1 Tsp paprika
-
1 Tsp dried thyme
-
1 Tsp mixed herbs
-
½ Tsp salt
-
¼ Tsp black pepper
-
2 Tbsp lemon juice
-
3 Tsp garlic (minced)

1 ½ cups chicken broth

In a small bowl, combine the paprika, salt, thyme, mixed herbs and pepper. Rub the seasoning over the outside of the chicken.

On the pressure cooker control panel, turn the menu knob to the “Fry” function and press start.

Add in the oil until shimmering and then place the chicken in the pot, breast side down. Cook for 6-7 minutes.

Flip the chicken over and then add in the broth, lemon juice and garlic

Cancel the “Fry” function and then place the lid on the pressure cooker.

Turn the menu knob until you reach the “Meat” function

Press the “Texture” button until you reach the “Strong” setting (this will default to 20 minutes).

Press start to begin cooking. Music will sound and the cooker will start the countdown once the optimum pressure has been reached inside.

When the timer ends, cooker will beep and will switch to the “Keep Warm” function automatically. Press the cancel button.

Press the pressure release button on the top of the lid and then open the lid.

Remove the chicken and let stand for 5 minutes before carving
